I could go on and on about the factors of sensitivity and how at the end of the day, its just what you get used to :P, but if you want a more solid answer, a good thing to do would be to start at a value like 10cm/360 and keep going higher/lower until you feel comfy.

If you decide to switch to a much lower sensitivity, try playing scout and jump maps with it, i found it was the quickest way of getting used to a new sensitivity, hopefully you'll find the same.

i personally main soldier, but i'm using 18.5cm/360, but any value from 5cm/350-40cm/360 should be fine for a class like Pyro, just experiment a bit, i'm sure you'll find something in the end. :D

I personally prefer to have the accel turned off and a quite high sensitivity. I also recommend Razer's Deathadder 2013 as it has an very sensitive m2-button(resting your finger on it counts as a click). This combined with high sensitivity shaves off time from your airblast reaction times + helps tracking spies precisely.

If you have the mouse accel on it makes the chance to get matador stabbed way higher. Also tracking enemies with the flare is easier without the accel turned on.

Of course all of this comes down to personal preference.
