Here's one guide: http://tf2wiki.net/wiki/Help:Recording_demos some people use fraps, I wouldn't recommend it as if your demo jogs whilst recording it will show up on the avi, with the sourcerecorder method it will come out lag free, you can also record it in high resoloution and all setting on high. albeit that way is alot more time consuming.
