I sometimes forget to do it manually, would be amazing if there was a bind which would make you record demos and finish demos etc.

Try this:

bind BUTTON1 "record DEMONAME"

bind BUTTON2 "stop"

Or to put it all on the same button:

alias "demorecord1" "record DEMONAME; alias demorecord demorecord2"
alias "demorecord2" "stop; alias demorecord demorecord1"
alias "demorecord" "demorecord1"

bind BUTTON "demorecord"

Bear in mind that this will only work for one demo at a time - you would need to rename the demos or get some sort of fancy massive alias network on the go to record multiple demos. However I'm pretty sure that when you record manually like this does, it keeps going across map changes, so you would only need to use the commands once per official.
