Try this:
bind BUTTON1 "record DEMONAME" bind BUTTON2 "stop"
Or to put it all on the same button:
alias "demorecord1" "record DEMONAME; alias demorecord demorecord2" alias "demorecord2" "stop; alias demorecord demorecord1" alias "demorecord" "demorecord1" bind BUTTON "demorecord"
Bear in mind that this will only work for one demo at a time - you would need to rename the demos or get some sort of fancy massive alias network on the go to record multiple demos.
